The ultimate minced beef hotpot cooked slow in the slow cooker. Minced beef is cooked with carrots, celery, parsnips, and peas and then topped with delicious crispy sliced potatoes.
Sauté your onion in the slow cooker on the stovetop with a little extra virgin olive oil and then add in the minced beef and brown on all sides.
Peel and dice your parsnips and carrots and dice and clean your celery.
Stir into the slow cooker your veggies, half the seasonings, Worcester sauce, tomato puree, garlic puree and red wine.
Find a hole in the middle of the meat and place your frozen veggie stockpot. Then place the lid on the slow cooker and cook on high for 4 hours or on low for 7 hours. After 2 hours stir the defrosted stock cube into the mince.
After 3 hours prep and make your sliced potatoes, then stir in your frozen peas.
Add a scoop of mashed potatoes, and the rest of your seasoning into your mince and stir well.
Layer the top of your mince with sliced potatoes and then cook for a final hour before serving.
Notes
Potatoes. I hate how unhealthy gravy granules are and have not cooked with them for years. I recommend instead you add a tablespoon of leftover mashed potatoes and stir this into your mince instead.Carbs.
