Add the olive oil to the slow cooker, put it on sauté and then peel and slice the peppers and the onion. When the slow cooker warms up sauté for a few minutes until the onion has softened.
Add in the goat’s meat, stir and brown the meat.
Add in the seasonings and the purees and then stir.
Add the tinned tomatoes, red wine and the vegetable stock and stir. Then submerge your frozen stock into the centre of the stew.
Place the lid on the slow cooker and slow cook for 4 hours on high or 7 hours on low.
Stir in the frozen peas which will warm very fast from the slow cooker stew heat. Then give it a stir followed by a taste test and adjust if you think you need to add extra salt and pepper before serving.
We love to serve our slow cooker goat stew with some instant pot brown rice.
Notes
Stock. We make our own homemade instant pot veggie stock. We then freeze it in giant ice cubes and then we can use it from frozen in the slow cooker.
