Place 2.5 cups (600ml) of veggie stock into your inner pot. Add your peeled and diced sweet potatoes and mix with your hands. Add to the top of the sweet potatoes half of the butter, cut into cubes along with the seasonings.
Place the lid on the instant pot pressure cooker, set the valve to sealing and pressure cook for 10 minutes followed by a quick pressure release.
After a quick pressure release, drain the sweet potatoes with a mesh strainer and then transform into mashed sweet potatoes. Do a taste test and adjust with extra seasoning if needed.

Seasonings. We love sweet potatoes in the instant pot with some bouquet garni.
