Delicious creamy Thermomix Vegetable Soup without the cream or high calories. Loaded with broccoli, carrots, cauliflower, onion, and garlic, you will love the flavours of this quick prep Thermomix soup.
Peel and slice your onion. Load into the Thermomix with your garlic cloves and extra virgin olive oil. Place it on speed 6 for 5 seconds to mix well and to cut up the onion and garlic more finely. Then scrape down the edges.
Add the mixed vegetables and place on speed 1.5 for 5 minutes at 100c/210f.
Then add veggie stock and seasoning and cook for 20 minutes at 100c/210f at speed 2.
Scrape the edges again add sliced cheese, Greek yoghurt and extra salt, pepper, and parsley. Mix on speed 5 for 2 minutes before serving.
Notes
Creamy. If you would like your mixed vegetable soup to be creamier, then opt for 750ml of stock rather than 1000ml.Stock. I make ahead a big batch of instant pot veggie stock and make them into giant ice cubes.
