Slow Cooker Sausage Hotpot

The easiest ever sausage hotpot cooked in the slow cooker. Loaded with butcher’s sausages, baked beans, diced bacon, and topped with sliced potatoes.

  • Dice your bacon and sauté in the slow cooker on the stovetop with a little extra virgin olive oil and then put the bacon to one side. Add in the sausages and use the bacon fat to help brown the sausages on all sides.

  • Load into the slow cooker everything but the sliced potatoes and mix well.

  • Then place the lid on the slow cooker and cook on high for 4 hours or on low for 7 hours and then stir your sausages, bacon, and beans.

  • After 3 hours prep and make your sliced potatoes in the air fryer and then when the slow cooker has 30 minutes left, add the sliced potatoes over the sausage and beans.

  • Cook for the remaining cook time with the sliced potatoes on top before serving.

Notes

Sausages. I recommend thick sausages rather than thin sausages. Thin sausages will break too easily as the hotpot cooks and thick ones often are better flavoured.
Carbs. If you would like your sausage and sliced potatoes to be lower in carbs I recommend you swap white potatoes for sweet potatoes and follow our air fryer sweet potato slices recipe.
