  • Start by making your rub. In a mixing bowl add all your seasonings and mix with a teaspoon.
  • Pat dry your pork shoulder and place it into the slow cooker. Rub ½ the olive oil into the top and sides of the pork shoulder. Then rub in 75% of the rub into the sides and top of the pork.
  • Chop your onions into halves and remove the skin from both the onions and garlic cloves. Place them around the meat so that they are touching it but not on top of it.
  • Make the stock. In the mixing bowl add to your 25% rub 200ml of warm water. Along with the rind from the lemons and limes. Cook for 8 hours on low.
  • After 8 hours remove the pork shoulder from the crockpot and using a knife and fork shred the pork. Place the shredded pork back into the stock and mix well. Cook for a further 1 hour.
  • Remove the liquid from the crockpot and toss in olive oil via the sauté button for 5 minutes.
  • Serve.

Notes

We all like to have a different size when it comes to a pork shoulder. We used a 1.4 kilo (3lb size) and we find that it is perfect for feeding a family of five, especially if you serve it with wraps, fries and a salad.
 
The final stage (when you sauté the meat before serving) you can also do this via the oven or in a wok.
 
You could also use orange juice instead of lemon. We prefer lemon and we have a lemon tree that produces way more lemons than we can get through!
