In a second bowl add your seasoned breadcrumbs and mix into it your grated parmesan cheese.
In a third bowl add your oat flour.
Load your peeled and cooked cold shrimp into the oat flour, then into the egg mixture and finally into the breadcrumbs. Make sure each shrimp is well coated.
Brush off any excess breading that has fallen off and then line them up and place your shrimp into the air fryer basket making sure they are not overcrowded.
Cook for 5 minutes at 200c/400f and serve with your favourite dipping sauce.
Notes
If you have purchased unseasoned breadcrumbs or made your own from stale bread, then I recommend you add some extra seasoning. My favourite is to add 1tbsp of mixed herbs, salt, pepper and sprinkle of paprika.I recommend using Bob’s Red Mill and his oat flour for the flour base. It is light and stops your breaded shrimp from being dry.
