Instructions

  • Get your beef fillet, give it a clean, chop any visible fat, season with salt and pepper and then seal it up with cling film and place in the fridge for an hour.
  • Make your batch of chicken liver pate and homemade shortcrust pastry.
  • Roll out your shortcrust pastry and using a pastry brush go all around the edges with beaten egg to help make it sticky for sealing.
  • Then inside of the outer egg line place a thin layer of the homemade pate until you can no longer see the white pastry.
  • Remove the cling film from the meat and place the meat in the middle on top of the pate and push it down a little.
  • Seal the pastry around the meat and the pate.
  • Score the top of the pastry so that the meat has a chance to breathe.
  • Place in the Airfryer on the Airfryer Grill Pan and cook for 35 minutes at 160c/320f.
  • Leave to rest for a couple of minutes, slice and serve with roast potatoes.

Notes

To save on time it is easiest to pre-make the pastry and the pate earlier in the day. I do a full batch of both my pastry recipe and my pate recipe. Then any that are leftover can be used later.

Then fridge them both for an hour and then they are easier to handle. If you want to cheat and make it look like puff pastry, then make my shortcrust pastry but swap plain flour for self raising flour.

It will then puff up and people will think you have made homemade puff pastry. If you wish you can make your pate the day before. It’s the biggest job in making a Beef Wellington and then takes the pressure off you. Avoid making the pastry more than 2 hours in advance.

This keeps it in its best condition and is better for rolling and even improves the chances of a non-soggy Beef Wellington. There is no law that says that a Beef Wellington must use beef fillet, it is just associated with luxury meat.

You could also use sirloin or brisket too. Also remember to have nice sharp knives before you start. This is particularly important when slicing the beef wellington otherwise it will cut badly and look awful. I always use my knife sharpener to do this.

We have found the best place to source beef fillet to make Airfryer Beef Wellington is from ButcherBox. You even receive free bacon and $10 off your first order when you sign up with this link.
