Soup Maker Pasta Soup

Delicious soup maker pasta soup. Using leftover homemade pasta and loaded with vegetables. This Mediterranean inspired soup is perfect for a hearty pasta soup on tired days.

Ingredients

First Ingredients

  • 480 ml Vegetable Stock
  • 3 Medium Carrots peeled and diced
  • 4 Garlic Cloves peeled and sliced
  • 1 Courgette diced
  • 1 Red Onion peeled and diced
  • 3 Celery Sticks cleaned and diced
  • 3 Tomatoes (chopped)
  • Fresh Basil Leaves

Instructions

  • Place the stock into the bottom of the soup maker. Then load it up with just peeled and chopped vegetables, adding everything but tinned tomatoes, seasoning, pasta, and green beans. Place the lid on and cook for 20 minutes on the chunky soup setting.

  • Next remove the soup maker lid and add stir.

  • Add in everything else including your little chunks of pasta. Place the lid back on the soup maker and cook on chunky for another 10 minutes.

  • Check the soup maker and adjust with extra seasoning if needed.

Notes

Time. Our soup maker only has one time option for chunky soup and that is 30 minutes. So, I usually just pause it, add the other ingredients and then resume. Or you might need to cancel the soup at the correct time.
Pasta. As you know we used leftover pasta from a pasta making class. You can use any fresh pasta in this recipe instead.
