  • Peel and slice your butternut squash, carrots, and onion. Load into the slow cooker.

  • Dice your chicken breast and add to the slow cooker your chicken breasts, drained white beans, tinned tomatoes or tomato sauce and seasonings. Mix well and place the lid on your slow cooker. Cook for 4 hours on high or 7 hours on low.

Notes

Swaps. Mix and match whichever tinned tomatoes you would like to use. We often use either plain tinned tomatoes or blended tinned tomatoes. You can also use garlic or mushroom flavour too.
Freezer. Any leftovers can be placed in freezer containers and once cool frozen for another day. We found that when you added brown rice as a side dish this recipe would easily feed 6-8 people, depending on portion sizes.
