Delicious Greek style halloumi salad. Loaded with air fryer halloumi, tomatoes, cucumber, red onions, olives, and greens. Perfect for something light and tasty this summer.
Slice your halloumi into cubes and season with oregano.
Place the halloumi in the air fryer. Air fry for 6 minutes at 180c/360f.
Whilst the air fryer is working its magic make your salad. Start with clean rocket leaves, add sliced cucumber around the edges, then halved cherry tomatoes, then olives and finish with some diced red onion in the middle.
When the air fryer beeps add a drizzle of extra virgin olive oil and add the air fryer halloumi chunks. Serve whilst the halloumi is still warm.

Make Ahead. You can also make ahead your salad ingredients and then just air fry the halloumi and drizzle the extra virgin olive oil when ready to serve.Flimsy. Note that halloumi is rather flimsy and breaks really easy. That’s why I recommend being really gentle with it.Salt. Halloumi is high salt.
