The ultimate round lemon drizzle cake cooked in the air fryer. This lemon drizzle cake recipe is the easiest ever to prep, cooks perfectly in the air fryer, is moist and flavoursome and you will want to go back for a second slice.

Quantity. This lemon cake batter made enough for two cakes. I made one into a round lemon drizzle cake and the second into a copycat Mr Kipling Lemon Slices. You can half the quantities and make just the round cake for 12, sandwich the two cake rounds into one large cake or keep it as two separates.
Zest. When doing the rind from the lemon aim for a very small grater. There is nothing worse than huge bits of lemon zest in your lemon cake.
