Dice your bacon and load into the soup maker with extra virgin olive oil. Sauté for 5 minutes. Cancel sauté. Whilst the soup maker is doing the bacon peel and dice your vegetables.
Add in the vegetable stock and tinned tomatoes first and stir.
Then add in everything else from the main ingredients list, stir and then place the lid on your soup maker.
Cook for 10 minutes on the chunky soup setting. After 10 minutes remove the lid and add all the 10 minutes later ingredients and stir.
Cook for a further 20 minutes before serving with warm crusty bread.
