Air Fryer Leftover Prime Rib Hash Ingredients:

  • 250 g Leftover Prime Rib
  • 3 Small Sweet Potatoes
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 2 Tssp Extra Virgin Olive Oil
  • 1 Tsp Sweet Paprika
  • 1 Tsp Coriander Leaf
  • Salt & Pepper

Instructions

  • Peel and dice your potatoes and dice and remove the seeds from your peppers.

  • Load the sweet potato and peppers into a bowl with your oil and seasonings. Mix well with your hands.

  • Load into the air fryer basket and cook for 12 minutes at 180c/360f.

  • Whilst the air fryer is cooking your potato and veggies, chop your prime rib into bite size hash chunks.

  • When the air fryer beeps add your prime rib, shake the air fryer basket and cook for a final 3 minutes at the same temperature.

Notes

Leftovers. If you want to eat this over a few breakfasts, then cook everything but the prime rib. Then load the prime rib with the hash into the air fryer basket and cook for 3 minutes. This will then reheat everything together.
Swaps. You can mix and match your veggies. I love to use courgette (zucchini) and mushrooms also work well.
