Vegetable Stew With Dumplings. How to make a hearty and flavoursome vegetable stew using delicious root vegetables and homemade herby dumplings. The perfect combination for the cold winter months.
Peel and dice your root vegetables and potatoes. Load into the slow cooker, along with seasoning, tomato sauce, tinned tomatoes, and vegetable stock. Stir and place the slow cooker on high for 4 hours.
Whilst the slow cooker is cooking your vegetable stew make a batch of homemade dumplings. Cook the dumplings for 4 minutes in an air fryer at 180c/360f.
When the slow cooker has just an hour left, stir the vegetable stew, and add in any extras such as drained white beans, chickpeas, peas etc.
Next place the dumplings on top and cook for a further hour before loading into bowls and serving.

Ahead. You can also make your dumplings ahead of time and then leave in the fridge for later.
