Slow Cooker Leek & Potato Soup. How to make potato and leek soup in the slow cooker. Easy to prep, delicious tasting and best of all creamy without cream.
Slow Cooker Leek & Potato Soup Ingredients:
Slice and clean your leeks in a colander.
Peel and dice your potatoes.
Load leeks and potatoes into the slow cooker, along with seasonings and vegetable stock and mix well. Slow cook for four hours on high or 7 hours on low.
Add Greek yoghurt and any extra seasonings and blend well with a hand blender.
Serve warm with bread.
Optional. I love to add butter to my leek and potato soup. If you don’t want a fat free leek and potato soup add small chunks of it when you add your seasoning on step #3.
