Slimming World Courgette Soup. How to make a delicious creamy courgette soup in the soup maker. Low in calories and low carb this creamy courgette soup is easy to mix and match with favourite seasonings. As well as being suitable for Slimming World, Weight Watchers and Keto.
Soup Maker Courgette Soup Ingredients:
Slice and dice your courgettes and give them a quick wash. Load half your courgette, garlic puree and seasoning into your soup maker.
Place the lid on the soup maker and set it to blend and pulse blend for a minute or two until half the courgette has blended.
If you have more courgette add it in now. If not, set the soup maker to smooth soup and cook for 28-30 minutes.
When it beeps remove the lid, add in any extra seasonings, soft cheese, grated cheese and stir. Load into bowls and enjoy!
Pulsing. We pulse the courgette first with the blender. This will make a courgette sauce for you to use in this soup and will mean that the recipe is stock free because the courgette becomes the stock.
Cheese. If you want a low calorie courgette soup, then don’t include the cheese in this recipe. You can also mix and match with different cheeses.
Time. The Morphy Richards soup maker has a standard 28 minute cook time, whilst the Ninja Foodi Soup Maker has 30 minutes, just go with whatever the setting is on your soup maker.
Stuff. Soup makers are known for not fitting much in them. By blending a little first, you can free up space and fit a lot more in your soup maker.
