Mediterranean Vegetables In The Air Fryer. Delicious Mediterranean summer vegetables cooked without oil in the air fryer. Loaded with eggplant, zucchini, green peppers and cherry tomatoes. Then sprinkled with Mediterranean seasoning for the perfect veggie loaded air fryer side dish.

Ingredients

Air Fryer Vegetables Ingredients:

  • 1 Green Pepper
  • 1 Zucchini
  • 1 Eggplant
  • 6 Cherry Tomatoes
  • 1 Tsp Oregano
  • 1 Tsp Thyme
  • Salt & Pepper

Instructions

  • Slice the top off your pepper, pull and remove the seeds.
  • Slice and dice your eggplant, zucchini and green pepper.
  • Mix with seasoning in a bowl and then load into the air fryer basket.
  • Cook for 12 minutes at 180c/360f.
  • While they are cooking season your cherry tomatoes with a little extra oregano and salt.
  • When the air fryer beeps, shake the air fryer basket, add in the cherry tomatoes and cook for a further 3 minutes at 200c/400f.
  • Serve while still warm.

Notes

Remember you can mix and match any air fryer summer vegetables. My favourite is to add just peeled garlic cloves for a wonderful Mediterranean taste.
Try not to slice your vegetables too big as it will increase the cooking time.
