Instructions

  • Add into a bowl – mixed spice, grated carrots, flour and sugar and mix well.
  • Make a well in the middle and crack your eggs into it. Using a fork beat the eggs into the rest of the carrot cake batter.
  • Add milk and extra virgin olive oil.
  • Load cake batter into your air fryer baking pan. Cook for 25 minutes at 170c/340f, followed by a further 5 minutes at 180c/360f.
  • While the carrot cake cooks make your cream cheese frosting. Place the soft cheese and icing sugar into a bowl and using a hand mixer, mix the cheese into the sugar until light and fluffy. Add in the orange juice and rind and stir with a fork. Place into the fridge for an hour.
  • When the carrot cake is cooked allow to cool before loading it up with cream cheese frosting. Fridge for a little longer to let it set properly and then serve.

Notes

If cream cheese frosting is not your thing, then that is fine. Simply leave out the topping and eat them just as carrot cake crumb bars.
Place a cocktail stick in the middle and if it comes out clean your carrot cake is cooked.
