Slow Cooker Chicken Fricassee. One of my favourite French comfort foods slow cooked chicken fricassee is easy to make in the slow cooker and full of French flavour.

Instructions

  • Clean the celery.
  • Peel and dice the onion, sweet potato and carrots. Dice the celery. Peel the garlic cloves.
  • Dump the garlic, celery, onion and carrots into the slow cooker.
  • Pour in the white wine, cream and seasonings.
  • Season the chicken fricassee with salt and pepper and place it on top.
  • Place the lid on your slow cooker, cook on high for 3.5 hours.
  • When it is cooked remove the chicken and put to one side.
  • Using a blender, blend about 20% of the slow cooker contents and mix well and add in the rest of the after cooking ingredients. Stir well.
  • Serve with the chicken over the sauce with warm crusty bread.

Notes

You can chop up a chicken or buy pre-chopped chicken fricassee. Weights will vary depending on the size of your chicken. To follow my recipe the timings would work for a 750g to 2 kilo chicken.
You can use any type of cream. I like single cream or coconut cream the most when I am cooking. You could also use yoghurt too such as the French favourite Fromage Frais.
Even though the garlic cloves are whole, its not strong once the garlic is cooked.
We used one large sweet potato. You could swap this for parsnips, butternut squash, white potatoes etc.
