Air Fryer Turkey Meatballs. Moroccan couscous turkey meatballs cooked in the air fryer. A delicious easy turkey meatballs recipe and a great healthy meatball alternative too.

Instructions

  • Cook the couscous if you don’t have some cooked already. See recipe notes below.
  • Place the cooked vegetables in the blender along with the turkey leg meat, turkey stock, soft cheese Greek yoghurt and seasoning. Blend for a couple of minutes or until the mixture resembles a thick pate.
  • Remove the blender ingredients into a mixing bowl, add in the couscous and mix well.
  • Make the mixture into balls and roll in the desiccated coconut.
  • Place in the Air Fryer for 16 minutes at 180c/360f and then serve.
  • If serving at a party place on sticks for a nice party piece.

Notes

If you’re not using leftover couscous, then you will need to make a quick batch of it or use breadcrumbs. To make couscous in a small pan add 1 cup of boiling water, along with ½ cup of couscous. Place the pan lid on top and leave for 10 minutes. Stir after 10 minutes and it is done.
We used leftover brown turkey meat from a turkey leg. But you could use chicken leg, turkey breast or chicken breast if you preferred.
