  • Place the chicken breasts on a clean chopping board and sprinkle with salt and pepper. Wrap a slice of bacon width ways and then another length ways until you have done all 4 chicken breasts and then put them to one side.
  • Remove the core from the red pepper, peel the carrots and dice the pepper, carrots and tomatoes. Place the vegetables into the bottom of the slow cooker and season well with salt and pepper and oregano.
  • Place the chicken wrapped in bacon over the vegetables and cook for 4 hours on high in your slow cooker.
  • Remove the chicken and bacon carefully after 4 hours and put to one side.
  • Drain the liquid from the slow cooker, add all the seasonings and using a hand blender, blend until smooth.
  • Serve with the chicken wrapped in bacon.


I used on the vine fresh tomatoes. They are delicious and give so much more flavour. Avoid jars of tomato sauce as they are just not as good.
If you feel the Hunters Chicken sauce is not creamy enough then at the end add in a tablespoon (or two) of either Greek yoghurt, quark or fromage frais.
Or if you are on a dairy free diet, coconut milk also works very well. I drain the liquid from the slow cooker because tomatoes carry a lot of liquid and if you don’t you end up with a watery sauce.
You can either use a sieve or like I do, ladle out a few ladles of the liquid.
The reason you get this build up is because of the amount of water that tomatoes carry. To keep it Syn Free remember to remove the fat from the bacon before you cook your hunters chicken.
