Air Fryer Fried Green Tomatoes

Start your production line. Beat an egg in a small bowl. Add the oat flour, salt, pepper and paprika to a second bowl and mix well.
In the blender add to it ½ of the rolled oats and blend until nearly at oat flour but not quite. Add this to the 3rd bowl along with the rest of the rolled oats and the oat bran.
Slice the green tomatoes into medium sized slices and discard the top and bottom. Dry the slices so that they are not overly wet.
Place the green tomatoes into the flour bowl, then the egg bowl and then into the breadcrumbs bowl.
Then place them in the air fryer in sets of 4 slices.
Cook for 6 minutes on each side in the air fryer grill pan for 6 minutes at 180c/360f.
You can of course us classic breadcrumbs and classic flour, but I love the light feeling of gluten free oats and flours. Our air fryer fried green tomatoes freeze well.
