Syn Free Chicken & Broccoli Fakeaway Recipe

Delicious creamy chicken and broccoli cooked to perfection. Syn Free and difficult to stop at just one bowl.

  • Chop up the broccoli into small florets. Slice the chicken into thin strips.
  • Peel and dice your onion. Add the garlic to it and cook it on a medium heat in a medium pan with a little fat free cooking spray.
  • In another pan add your noodles, fill the pan to just above the noodles and cook on a medium heat for 5 minutes. Then turn off the heat and allow to cook for a further 2 minutes. Then using a sieve drain them and put them to one side.
  • When the noodles have come to the boil add your chopped broccoli and leave them in here until you remove the noodles from the pan.
  • When the onions have softened add the chicken, all seasonings and cook for 2-3 minutes until the chicken is cooked.
  • Add the broccoli to the chicken, turn the heat up to high and cook for a couple of minutes so that the broccoli can get a good colour to it.
  • Add the quark and give it a good stir.
  • Serve.

Notes

I use the noodles water to blanche my broccoli. It speeds up the cooking process and then they can continue to cook when you sauté them with the chicken. The chicken we used was thin chicken strips.
 
This takes a lot less time to cook compared to regular chicken breasts and speeds up the cooking process. For a Plan B – you can also cook the broccoli for 1 minute in the Instant Pot. But I prefer it in the noodle water as it adds flavour to the dish and saves getting out another thing to wash up.
