Garlic Butter Zoodles Recipe

Delicious garlic butter zoodles, quickly prepped and then cooked to perfection all in one pot. A family favourite that is Paleo, Whole30, Gluten Free, Vegan & Vegetarian.

  • Chop the ends off your courgettes.
  • Spiralize 3 large courgettes, until you have nothing left to spiralize.
  • In a large pan add your garlic puree, onion, seasonings and olive oil and toss the onion in the olive oil until the onion has gone soft.
  • Add the coconut butter and allow to melt.
  • Add the courgette to the pan, season well with salt and pepper and toss so that the garlic puree, onion, coconut butter and olive oil has well coated the spiralized courgettes.
  • Cook for 5 minutes until the courgette is cooked.
  • Serve.

Notes

The combo of parsley, rosemary, salt and pepper gives it that AMAZING garlic butter flavour that you associate with restaurant style garlic potatoes.
We used fresh rosemary and fresh parsley in it so that it was more luxurious than just dried herbs.
Another trick is when you place the courgette into the pan, is to toss the salt and pepper in the air, that way it coats the courgette much better.
Fresh herbs carry a lot of germs, please make sure you give it a good clean before cooking with it.
Some people don’t use the skin off courgettes when making zoodles, I disagree because it gives it a lovely colour.
When cooked it can be like a warm salad and is perfect for serving with chicken, fish or another vegan dish.
