Welcome to my ultimate leftover soup in the soup maker. For the month of January the recipe theme is all about soup and more in particular soup in my amazing soup maker.

Ingredients

  • Soup Maker
  • ½ Medium Courgette
  • 5 Medium Carrots peeled
  • 1 Medium Leek
  • 1 Small Broccoli
  • ½ Small Cauliflower
  • 1 Tsp Parsley
  • 468 ml Water
  • Salt & Pepper

Instructions

  • Chop up your vegetables and add them to your soup maker.
  • Add the water and seasoning.
  • Mix well so that the water is everywhere
  • Put your soup maker on its cook and blend feature for 25 minutes
  • Serve!

Notes

The idea behind this is making good use of your leftovers. This is perfect after Christmas or before your grocery shop when you are combating food waste. Root vegetables, salad bits and potatoes all do very well in it. Above is the recipe used by us with some of our leftovers before a grocery shop.
