Welcome to my simple avocado chow mein recipe. I am a huge Chinese food addict. It started when I was 11 years old and my mum first introduced me to Chinese food.
Using your spiralizer make your courgettes into zoodles and put to one side.
In your wok add the onion, garlic and ginger and cook on a medium heat with the olive oil.
Chop your avocado in half. Slice one half and mash up the other. Add the mashed side to the wok along with the different herbs and spices. And mix well.
Add the courgette zoodles and cook for a further 5 minutes.
Add the rest of the avocado that you have sliced up and cook for a further 2 minutes.
Serve!
Notes
If you want less cream and a more juicer base then I would recommend that you add some extra olive oil and some extra soy sauce. Always go for light soy sauce as it has a lot less salt in it and is better for you.
