Cream the butter and the sugar together until it is light and fluffy. Add the egg, chocolate, coconut and vanilla essence. Add the flour and mix well.
Make into medium sized biscuit shapes and then roll in the oats.
Place in the Airfryer for 18 minutes on 180c.
While they are cooling make your filling. Cream the icing sugar and the butter until you have a lovely creamy mixture. Add the lemon juice and the vanilla, mix again and then put to one side.
When the biscuits are cool add the filling and press together so that they resemble a nice sandwich.
Notes
I use gluten free oats because I prefer the taste of them, but you can also use regular oats if you prefer.
