Place everything apart from the grated carrot and the couscous into the blender and whiz around until blended.
Add the couscous along with 2 cups of boiling water and mix without using the blender function. Leave a lid on the top for 10 minutes so that the couscous can cook.
Take the lid off, give it a quick stir and place into bowls.
Decorate with the grated carrot.
Serve.
Notes
For the cooked vegetables you can use whatever you like but I love red peppers, carrots and broccoli as mine. But wet vegetables are the easiest i.e. cauliflower and courgette in case your blender isn’t that high duty.
