  • Preheat the Airfryer to 180c and grease a tin suitable for bread baking for the Airfryer.
  • Grate the courgette and then squeeze out any excess moisture with your hands until it is water free.
  • Whisk the oil, egg, yoghurt, orange and vanilla together in a medium bowl. Continue to do so until it is well combined. Add the seasoning and then the flour a bit at a time.
  • Fold in the courgette.
  • Pour into your bread tin.
  • Cook for 30 minutes in the Airfryer or until cooked in the middle.
  • Serve.

Notes

You will find that some Airfryers cook quicker than others, so keep an eye on your timings. Also use a toothpick to check if it is cooked and if it comes out clean you know it is done.
This recipe can be frozen once it has cooled down and stored in the freezer for up to 3 months.
For Syns this bread is rather low in Syns with just the flour and the coconut oil having syns in it. It made 10 slices for me and with the Syns for the whole loaf being 29.5 Syns it works out at just short of 3 Syns a slice. Also from a Slimming World point of view you can reduce it by using a lower syn fat instead of coconut oil, but I find coconut oil gives it an amazing flavour.
