  • In your Instant Pot fill the bottom with a cup of water and place your steamer basket inside of it.
  • Peel all your carrots and give them a clean.
  • One by one peel the carrots down to nothing with either a Julienne Peeler or a Spiralizer. Place them in a big pile on a clean worktop. Sprinkle with salt and pepper, thyme and mustard powder and keep tossing the carrots in the air so that everything is well covered.
  • Place the lid on the Instant Pot set to sealing and cook on the steam function for 15 minutes. Manually release pressure, remove the steamer basket and the water from the bottom of the Instant Pot.
  • Place the Instant Pot on the sauté setting and add to it the coconut oil, chopped bacon, onion and the rest of the seasoning. Sauté for 5 minutes or until the bacon is cooked and the onion is crispy. Add to it the carrot, stir well and serve with fresh tomatoes.

Notes

We get our carrots in a big kilo bag from the supermarket and they are all medium sized. If you work off pounds this is 2.2lbs worth.
Try to aim for medium or large carrots as small ones are very difficult to get good use out of with a Julienne Peeler.
You can also do this with a Spiralizer, but I find most don’t like carrots with them being so hard and that a Julienne Peeler does a better job and wastes less.
