Place a cup of water into the bottom of the Instant Pot. Add your steamer basket and add the potatoes first and then sprinkle over the top ½ the garlic along with salt and pepper. Place the lid on your Instant Pot, set the valve to sealing and cook on steam for 20 minutes.
While it is steaming cut your tomatoes into small chunks and mix with the remaining garlic and extra salt and pepper.
When the Instant Pot has finished use manual release to remove the pressure quickly.
Remove the steamer and the water from the bottom and put the potatoes to one side.
Place the tomatoes, onion, remaining seasoning and olive oil into the bottom of the Instant Pot and sauté for 10 minutes or until the tomatoes are like mush.
When they turn to mush use a hand blender to blender the majority of the tomatoes until they are 60% smooth.
Return the potatoes to the pot, have a good stir and serve with fresh herbs.
Notes
Think portion control – ½ large potato per person is a good size when you have meat to go with it. Or 1 large potato each if you are just eating this for your main meal.For a creamier texture stir in ¼ of a can of coconut milk a couple of minutes before serving.
