  • In the bottom of the Instant Pot add a cup of warm water.
  • Place the steamer basket into the Instant Pot.
  • Slice the sweet potatoes in half and season the flesh with salt and pepper and rub olive oil into the flesh. Score the flesh both vertical and horizontal until it is like simple squares.
  • Place the sweet potato halves into the steamer basket, place the lid on the Instant Pot and set to sealing. Cook on the steamer function for 20 minutes.
  • When it beeps manually release pressure and serve.

Notes

I love to sprinkle mine with whatever herbs I am in the mood for. With sweet potato this is usually coriander seeds and some cumin. It then gives it a delicious Indian taste.
For us we find a standard serving of olive oil is one tablespoon per ½ a sweet potato. It is also a great amount for keeping your calories in check.
