  • Peel and dice your onion. Peel and grate your garlic cloves. Peel and dice the sweet potatoes.
  • Place the onion and garlic in the bottom of your Dutch Oven along with your olive oil and sauté for 2-3 minutes on a medium heat until the onions have softened.
  • Remove the onion from the Dutch Oven and put to one side.
  • Place the coconut oil in the bottom of the Dutch Oven along with ½ the paprika. Mix well and then place the chicken in upside down and brown the skin. Turn it over and then brown the other side. This should take 3 minutes on each side.
  • Remove the chicken and put to one side.
  • Return the onions back to the pot and add the sweet potato. Season well with salt and pepper and add some cumin and coriander to enhance the flavour. Mix well so that the potatoes are well covered.
  • Place the chicken on top.
  • Pour over the chicken and into the bottom the chicken stock.
  • Rub an extra teaspoons worth of paprika into the skin of your chicken.
  • Place the lid on the Dutch Oven and cook on a 200c heat for 45 minutes.
  • Serve.

Notes

For the best chicken stock in your recipes I would recommend Kettle & Fire. Unfortunately they are not available in the UK so if you are UK based I would use OXO cubes.
