Delicious and creamy Thermomix chicken and corn soup. Easy to prep and loaded with boneless chicken thighs, frozen corn, and chicken stock. Paired with fresh sliced wholemeal bread it makes a fantastic midweek soup dinner.
Place chicken thighs on a chopping board and season well with salt and pepper.
Load the chicken thighs into the Thermomix and then pour over chicken stock.
Add in other seasonings and the frozen garlic. Cook for 15 minutes on speed 2 at 100c/210f.
When the Thermomix beeps do 1 minute on speed 4 and this will shred the chicken for you ready for soup. Add frozen corn, extra salt and pepper and cream cheese.
Cook for 2 minutes on speed 2 at 80c/175f or until nice and creamy. Then serve with bread.

Creamy. The secret to our super creamy soup without cream is Philadelphia cream cheese. Plus, you can use lightest or light if you are on a diet.Stock. I make ahead a big batch of instant pot chicken stock and make them into giant ice cubes.
