Delicious creamy Thermomix Broccoli Soup without the cream. Served with melted cheddar cheese and extra steamed broccoli and almost zero prep this is a busy weeknight dream come true.
Peel and slice your onion. Load into the Thermomix with your frozen garlic and extra virgin olive oil. Place it on speed 6 for 5 seconds to mix well and to cut up the onion and garlic more finely. Then scrape down the edges.
Add the white wine, veggie stock and broccoli florets. Cook for 12 minutes on speed 2 at 100c/210f to kickstart the process of cooking the broccoli.
Scrape the edges and add in the cheese and frozen parsley and cook for a further 7 minutes at the same speed and temperature.
Add in the final seasonings and Greek yoghurt and do 3 minutes at speed 6 to make the broccoli soup super creamy before serving.

Creamy. I have found for the perfect creamy broccoli soup that a thick Greek yoghurt does the best job.Stock. I make ahead a big batch of instant pot veggie stock and make them into giant ice cubes. Then I can use them in soup recipes, stews etc and they reheat perfectly in the Thermomix.Broccoli.
