  • Peel your garlic and onion. Slice your onion and load into the Thermomix with your garlic cloves and extra virgin olive oil. Place it on speed 6 for 5 seconds to mix well and to cut up the onion and garlic more finely. Then scrape down the edges.

  • Add the pumpkin and let it sauté with the onion and garlic. Set it to speed 1.5, 100c/210f and 5 minutes.

Notes

Creamy. I have found for the perfect creamy pumpkin soup to only add 1 cup of stock. Winter squashes (butternut, pumpkin, spaghetti) all carry a lot of water and it can end up too watery otherwise.
Store. You can keep your leftover pumpkin soup in the fridge for up to 4 days and also reheat it in the Thermomix.
