Would you like an effortless thick and creamy pumpkin soup? Then this Thermomix pumpkin soup recipe is perfect for you. Easy to prep, flavoursome, thick, and creamy and so good you will want to make it again and again.
Peel your garlic and onion. Slice your onion and load into the Thermomix with your garlic cloves and extra virgin olive oil. Place it on speed 6 for 5 seconds to mix well and to cut up the onion and garlic more finely. Then scrape down the edges.
Add the pumpkin and let it sauté with the onion and garlic. Set it to speed 1.5, 100c/210f and 5 minutes.
Scrape the edges and add in stock and all seasoning. Set to speed 2, 100c/210f for 20 minutes.
When the thermomix beeps blend for 1 minute at speed 6 to make it nice and creamy and smooth. Test the flavour and if it needs more add extra seasoning.
Then serve with pumpkin seeds and your favourite bread.

Creamy. I have found for the perfect creamy pumpkin soup to only add 1 cup of stock. Winter squashes (butternut, pumpkin, spaghetti) all carry a lot of water and it can end up too watery otherwise.Store.
