Ingredients

Pie Crust

  • Puff Pastry Sheet
  • 3 Boneless Skinless Chicken Thighs
  • 60 ml White Wine
  • 50 g Frozen Garden Peas
  • Leftover Cooked Veggies
  • 150 g Philadelphia Light Cream Cheese
  • 2 Tbsp Semi Skimmed Milk
  • 2 Tsp Parsley
  • Salt & Pepper
  • Egg Wash

Instructions

  • Place your chicken thighs into the air fryer basket, season with salt, pepper, and half the parsley. Cook for 12 minutes at 180c/360f.

  • Add to the bowl the milk, cream cheese, leftover veggies, and white wine. Mix well until you have a creamy pie filling. Remove the chicken and chop into small chunks and then load into a mixing bowl.

  • Then season some more with salt, pepper, and parsley. Add frozen peas and stir.

  • Roll out your pie crust bottom (made of homemade shortcrust pastry) and the puff pastry lid. Then place the shortcrust bottom into the pie maker.

  • Add the chicken filling and then press down the puff pastry lid. Snip the top of the pie with scissors to allow your pie to breathe as it cooks.

Notes

Leftovers – You can skip the cooking of the chicken thighs in the air fryer if you are using leftovers. Then simply focus on the cream cheese sauce and adding the pies to the pie maker.
Variations – You can use any leftover chicken in this recipe and mix and match with what vegetables you have in. My favourite is to combine leftover chicken with leftover veggie bake for the ultimate pie.
