Slow Cooker Corned Beef Stew. How to transform your corned beef leftovers into the most delicious ever corned beef stew. Loaded with root vegetables, corned beef, potatoes, and gravy, this is a recipe keeper.
Peel, slice and dice your potatoes and vegetables and load into the slow cooker. Season well and mix and then add chunks of butter too.
Add your leftover corned beef hash, along with the gravy and mix well.
Slow cook for 3.5 hours on high.
Stir and then add in frozen peas and then stir a little more.
Cook for a further 30 minutes on high before serving.
