Beer Cheese Soup. A delicious, creamy, healthier version of the German classic beer and cheddar cheese soup. Made without flour and without butter, loaded with hidden veggies, this is one of the easiest soups you can make at home in your soup machine.
Peel and dice your red onion. Clean and slice your celery sticks. Deseed and slice your yellow pepper. Peel and dice your sweet potato.
Load your prepped ingredients into your soup maker along with the beer, vegetable stock and seasonings. Place the lid on your soup maker and cook for 30 minutes on the smooth soup setting.
When it beeps and you have smooth soup, add in ¾ of your cheese and pulse the soup maker so that it mixes well.
Load your soup into bowls and sprinkle with the last of the grated cheese.
