Slow Cooker Monday Pie

Monday Pie. How to make the most delicious Monday pie using your roast dinner leftovers in the slow cooker. Then how to transform your Monday pie leftovers into a delicious Tuesday Carbonara. Works well with leftover roast beef, roast turkey, roast chicken, roast ham, or roast lamb.

Ingredients

Monday Pie Ingredients:

  • 500 g Leftover Roast Dinner
  • 50 g Frozen Peas
  • 150 ml Whole Milk
  • Salt & Pepper

Instructions

  • Grab all your roast dinner leftovers (excluding the mash) and load it into your slow cooker bowl. Mix well with your hands and place in the fridge for the night. In a separate container fridge your mash overnight too.

  • The following day add frozen peas, whole milk and salt and pepper to your slow cooker pot.

  • Place your mash over so that all gaps are covered.

  • Slow cook on low for 3 hours until your pie is piping hot. Load onto dinner plates and if you have a ladle worth left over, reserve this to make our Tuesday Carbonara.

Notes

Swaps. We used pork in the example and in another of our examples, turkey. You can use any leftover roast dinner. Beef and lamb also work very well.
Peas. I recommend adding in some frozen peas to bulk it up.
Thick. Note that the pie goes incredibly thick when left in the fridge overnight. Add some whole milk prior to cooking to make it creamy.
