Instructions

  • Load a can of coconut milk into your ice cream maker.
  • Add quartered pineapple chunks to it.
  • Add pineapple juice.
  • Load it with half your maple syrup or other sweetener.
  • Let it churn for 35 minutes.
  • Add in the rest of your maple syrup and let it churn for 5 more minutes.
  • Freeze for later.
  • Then serve with extra maple syrup.

Notes

You can mix and match and can either use canned coconut milk or the equivalent of dried coconut milk.
You can mix and match with your sweetener. I prefer maple syrup, but you can use honey or stevia if you prefer.
Test and adjust the pineapple juice. You can add more if you feel that there is not enough pineapple in it.
I find that fresh pineapple does not have enough spare juice. I will use the juice from a can of pineapple or some fresh pineapple juice with freshly chopped pineapple.
You can use frozen, fresh or canned pineapple. If using frozen please allow to thaw before churning or it will not mix properly.
Because I have a 3 year old obsessed with colour, I added in a little yellow food colouring. But this is totally optional.
