  • Place your chicken breasts on a clean chopping board and chop into medium sized chunks. Season with salt and pepper and put to one side.
  • Add to beaten eggs to one bowl along with your garlic puree.
  • To a second bowl add your oat flour and season it with sage.
  • To a third bowl add your breadcrumbs and season it with the rest of the seasonings.
  • Make sure each bowl is well mixed with its ingredients.
  • Load your chicken chunks into the oat flour, then the eggs and then the breadcrumbs until each chunk is well covered in the contents of each bowl.
  • Place into your air fryer or air fryer oven and cook for 12 minutes at 180c/360f or until cooked in the middle.
  • Serve.

Notes

I recommend that you check on your chicken by slicing into the thickest part to make sure it is thoroughly cooked.
I like to also add in parmesan to my breadcrumbs, but this is optional.
You can use this breading for any type of chicken or pork. Or follow some of the air fryer breaded chicken recipes that we recommend.
I used Bobs Red Mill Oat Flour in this recipe. It is much lighter than classic flour and improves the quality of your air fryer breaded chicken.
