  • Peel the onion and the carrots. Dice the carrots, onion, potatoes and celery and place them into the bottom of the Instant Pot.
  • Pour in the beans making sure you don’t drain them first, that way your juices from the beans can be part of your stock.
  • Add 2 cups of water, along with salt, pepper and Italian Seasoning and mix well.
  • Add the ham bones on top and cook for 10 minutes on manual.
  • Use QPR (quick pressure release), to manual release pressure once it beeps. Remove the ham bones and stir the Instant Pot soup.
  • Add in Fromage Frais for that delicious creamy French flavour.
  • Serve with warm crusty bread.

Notes

After making a batch of this I was surprised by how much it made. There was five of us and I reckon it could have fed us twice. If we hadn’t been on the road I would have frozen some for later. If you like your soup thin then add more broth, if you want it thick then add more beans.
I was feeling cold when I did this ham bone and bean recipe so we went with thick! Sometimes I find that the Instant Pot reduces the flavour too much, thanks to going to pressure, if you taste it and you feel it needs it, then add extra Italian seasoning and salt and pepper at the end of the cooking process. We used 2 leftover ham shanks.
We kept a small amount of the meat to add to the flavour (about a tablespoon) and also used the leftover fat that nobody wanted. The size of my haricot beans is 400g but they can vary depending on where you buy them from. In this recipe I don’t peel the potatoes. Potato skin tastes delicious and also saves you on food waste and prep time.
If you have any meat leftover from your ham shanks then add it at the same time as the potatoes as it can enhance the flavour even more.
