
Welcome to my Whole 30 No Peel Baked Sweet Potato In The Instant Pot. Crispy delicious sweet potatoes that are free from peeling and so easy to prepare and cook.
They are simply perfect for the Whole 30 to give you some much needed starchy vegetables.
Not only am I doing the Whole 30, but I am doing so as a new mum. My youngest of my 3 children was born in September last year and at the time of writing this was 7 months old.
He loves his breast milk and I don’t want to do anything that would ruin his supply.
He is having solids now and also has about 5 ounces a day of formula milk too and this means that for breast milk he has just 5 feeds a day.
His supply is not as demanding as it once was, but he still makes me feel starving hungry after a huge feed and this is when starchy vegetables are perfect for him and for me to be able to get through the Whole 30.
My favourite starchy vegetables are a split between butternut squash and sweet potatoes. I love both of them and could give up regular white potatoes for the rest of my life if my life could revolve around these instead.
They make you feel when you are on a low carb lifestyle that your body is not missing out and that you’re getting everything that your body needs.

If I have a hungry night, when he has binged on the breast milk and it is 8pm and I feel like I could eat everything then I can simply put one of these in the steamer basket and into the Instant Pot and “Hey Presto” I have a much needed feast.
But don’t you just hate peeling sweet potatoes? Unlike the white potatoes you buy from the supermarket, they are always in terrible shapes and when you peel them it always feels like you miss your place, or that you lose half the potato, because you peeled off too much.
Its even worse late at night when you are feeling exhausted and you want nothing more than to lay on the sofa and watch Netflix for several hours.
Well with this recipe it is the master of the sweet potato. You simply score it when cooked and it easily removes itself from the skin without much effort.
You can then snack on it in a similar way to how you snack on fruit. It is also great for a side dish to go with your main meal.

Whole 30 No Peel Baked Sweet Potato In The Instant Pot
Ingredients
- Instant Pot
- Kitchen Deluxe Steamer
- 2 Large Sweet Potatoes
- 4 Tbsp Olive Oil
- Salt & Pepper
Instructions
- In the bottom of the Instant Pot add a cup of warm water.
- Place the steamer basket into the Instant Pot.
- Slice the sweet potatoes in half and season the flesh with salt and pepper and rub olive oil into the flesh. Score the flesh both vertical and horizontal until it is like simple squares.
- Place the sweet potato halves into the steamer basket, place the lid on the Instant Pot and set to sealing. Cook on the steamer function for 20 minutes.
- When it beeps manually release pressure and serve.

Whole 30 Day 9
I am on day 9 and I am feeling less and less bothered about my sugar cravings. I never used to be this bad for chocolate and sweets and it wasn’t until I left home and I could have them whenever I pleased, did I go so mad for them.
Then 11 years ago I quit smoking. After a 30+ a day habit I was suddenly free of the dreaded cancer sticks.
But when I quit I found that I replaced that cigarette after a meal with a slice of chocolate instead.
Now because I have either smoked or eaten chocolate after lunch and dinner, I always have this instant craving for sweet things after I eat.
I am not thinking about it the rest of the day, but those are my trigger moments. As I write this not long after lunch all I can think of is how much I want chocolate!
Though, I do think that if I didn’t blog about it, that the obsession wouldn’t be as strong as if something is in your face, you do think about it a lot more frequently.
What I ATE On Day NINE Of The Whole 30

We are now on our second Tuesday and it feels so good to say that I am still sticking to it and that I have not cheated at all. I also don’t feel as bloated as I have always had, which feels amazing.
I have always had a really big stomach and for it to look less bloated makes it look like I have lost loads of weight (when I haven’t).
Breakfast = Pepper Omelette
Lunch = Steak, Vegetables & Sweet Potato
Dinner = Chicken Salad
Exercise = 5km Run/Walk
For breakfast today it is another pepper omelette. It gives me a great start to the day especially straight after exercise.
Because when you add exercise and breastfeeding together it leads to a very starving mama.
For lunch we have some rump steak cooked with garlic, along with steamed broccoli and baked sweet potatoes (the same featured in the recipe above).
It tastes so good and for a minute you forget that you are at home and that you are on the Whole 30 and it is truly special.
Then for dinner we had a chicken salad. I just love a roast chicken sliced up and then adding to a salad with loads of vegetables and extra avocado.
In my mind avocado belong together like salt belongs with pepper.
These were nothing short of amazing! My husband & kids loved them! They will be made again and again! The conaustency was like twice baked but not too soft. Thank you for sharing.
