INGREDIENTS

Leeks Potatoes Greek Yoghurt Oregano Thyme Parsley Salt & Pepper Vegetable Stock Butter

Step 1

Peel and slice your onion. Peel your garlic cloves. Load into the Thermomix.

Step 2

Chop and clean your leeks and load into the Thermomix with the butter. Mix on speed 6 for 5 seconds.

Step 3

Scrape down the edges and then cook for 5 minutes at 100c/210f at speed 1.

Step 4

Scrape the edges add potatoes until you are just below the max line and cook for another 5 minutes at the same speed and temperature.

Step 5

Add stock and seasoning and cook for a further 20 minutes at speed 2 at 100c/210f.
