Sometimes it can get repetitive to be having the same kind of soups all the time in the soup maker. I know this because this is the trap that I sometimes fall into. You end up with the same old go to soup recipes that are easy to make, that you love and that you know you will never fail on.
Based on our own recipes I would say that the three we end up having the most are:
We always buy a lot of broccoli and cauliflower so when we have some left over just before grocery shopping day, these will end up being made. Then there is the butternut squash and leek soup which was a happy accident when we were experimenting that we have a LOT.
So I decided via this blog to start making some new and interesting soups that I have never made before and out of all of them this Greek lemon chicken has to be my favourite “new one”.

- 1 Chicken Breast (boneless/skinless)
- 1 Large Onion
- 1 Red Pepper
- 2Tsp Chives
- 2Tbsp Garlic Puree
- 150ml Water
- 3Tbsp Greek Yoghurt
- Salt & Pepper
- 1 Large Lemon (zest and juice)
- 1 Cup Couscous
- ½ Cup Feta Cheese
- Peel your onion and dice it. Dice your pepper. Dice your chicken breast. Place all three in your soup maker.
- Add your seasonings, water, lemon and couscous.
- Cook for 25 minutes on the chunky soup setting.
- Once the soup maker dings, add the feta cheese and greek yoghurt and blend.
- Serve with croutons!
