Welcome to my pressure cooker curry sauce. We have a real treat for you on RecipeThis.com as we are dedicating this month to freezer meals in the Instant Pot Pressure Cooker.
Since we shared with you our Instant Pot Vegetable Curry back in October 2018, we have become incredibly passionate about meal prep and cooking your own healthy freezer meals.
We have a few different ideas and meal prep days that we have done in the pressure cooker and throughout this month we will be sharing them all with you.
You can either follow 1 recipe and do a larger batch of pressure cooking, or you can go all out and watch over our shoulder and do what we have done with Instant Pot Freezer Meals.
We’re starting our freezer meals feat over this week and next with our Indian themed curries, all of which have been adapted for the pressure cooker.
No matter what type of pressure cooker you own then it is perfect for you. Though our favourite choice would be the 8 litre (8 quart) Instant Pot as it is a fantastic size for meal prepping and bulk cooking.

We will be sharing with you 5 individual recipes of pressure cooker curries, followed by a blog post showing you how to make all 52 portions (split between the 5) in one morning.

Pressure Cooker Curry Sauce

We are starting our Instant Pot Freezer Meals today with our pressure cooker curry sauce. The reason for that is that we wanted to prepare a curry sauce for the freezer that you could use with absolutely anything.
- LOVE chicken = Chicken Curry
- LOVE Beef = Beef Curry
- LOVE Tofu = Vegan Curry
- LOVE Prawns = Prawn Curry
- LOVE Pork = Pork Curry
- LOVE Vegetables = Vegetable Curry
- LOVE Chickpeas = Chickpea Curry
And the list goes on and on. My Pressure Cooker Curry Sauce would be your base and then whatever you’re in the mood for, then you add.
Or you might have some air fryer chicken breast, then why not throw some of the pressure cooker curry sauce over it?

This pressure cooker curry sauce is so easy and it makes the biggest bowl of curry sauce that you have ever seen. Just look at it, isn’t that a HUGE portion?

I bagged it up and it made me 8 amazing bags of curry sauce that I could do whatever I liked with. The possibilities for it are endless.
But can I tell you the best feature of my pressure cooker curry sauce? It works perfectly for healthy eating. The base of the curry sauce is vegetables and lots of Indian seasonings.
Its like having the best health kick of your life when you eat this. If your family always says they hate vegetables, then they are hidden in this super sauce and would never even know!
The one reason I make my own pressure cooker curry sauce in bulk is because my husband is one of those curry haters.
He absolutely hates curry food even though he makes an impressive curry himself. When he used to work as a chef, everyone wanted his curry.
When we are eating some chicken and vegetables for dinner, I can add my pressure cooker curry sauce and I am getting my Indian food fix!
Pressure Cooker Curry Sauce Freezer Meals

Below is the production line I had going when I made my pressure cooker curry sauce and while I was making some other curry dishes for the freezer.

If you’re organised there is nothing complicated to making your own pressure cooker curry sauce freezer meal.
Create a production line first. Have the different foods that you need in different dishes, then you can just grab what you need and throw it into the pressure cooker.

Mix your seasonings first. When you are doing Indian food and you have lots of different seasonings to think about, then its important that you mix them first. Then you have the hard work out of the way.
Prep your vegetables. The worst thing with my pressure cooker curry sauce is all the peeling and chopping that needs doing.
Find a chef and talk them into doing it for you (like I did) or use a food processor. As you don’t want to spend all day cooking.

Dump & Go. I love those words and once you have prepped your vegetables and mixed your seasoning, you can do exactly that.
Throw everything in and go and relax while the Instant Pot Pressure Cooker does the rest for you!
Bag It. I used some simple zip loc freezer meal bags as all my freezer containers were in use. But you could use anything that is freezer safe.

Helpful Tools For Making Pressure Cooker Curry Sauce
The Instant Pot Pressure Cooker – I love my big 8 litre Instant Pot and it is perfect for making a huge batch of pressure cooker curry sauce. It can hold a lot of vegetables and you would be amazed once blended how much curry sauce you have ended up with.
I would estimate that you can increase freezer meal production by 20% with using the 8 rather than the 6.
Blender – For making your smooth curry sauce you will need a blender. We used our main blender in this pressure cooker curry sauce, but you could use a hand blender if you prefer.
Zip Loc Bags – I love my zip loc bags and they are the perfect container for when you’re making curry sauce. You can pour it into the Instant Pot from frozen to warm back up or into a saucepan if you prefer.

Glass Bottom – Alternatively you can use a glass bottom freezer container and then warm up your curry sauce from frozen either in the Instant Pot or in the oven. I prefer to do it in the oven from frozen.
Food Processor – If you have no chef to do the chopping for you, then you need a food processor otherwise you will lose all your sanity! It’s amazing how quick food processors can chop everything up for you. It’s like magic!

Pressure Cooker Curry Sauce
Ingredients
Kitchen Gadgets:
Recipe Ingredients:
- 2 Kilos Butternut Squash peeled and diced
- 500 g Carrot peeled and diced
- 2 Medium Onions peeled and diced
- 250 ml Vegetable Stock
Curry Sauce Marinade:
- 2.5 Tsp Garlic Puree
- 5 Tsp Garam Masala
- 5 Tsp Tandoori Sauce
- 2.5 Tsp Paprika
- 2.5 Tsp Turmeric
- 2.5 Tsp Cumin
- Salt & Pepper
Instructions
- Place into a bowl your marinade ingredients and mix well. Put to one side.
- Place into the Instant Pot 2 Kilos your Butternut Squash, 500g Carrot, 2 Medium Onions and 250ml Vegetable Stock.
- Then throw in half your curry sauce marinade ingredients.
- Cook for 4 minutes on high pressure and use quick pressure release.
- Blend with the rest of the marinade until smooth and load into freezer containers.
