I have always been a keen herbs and spices cook. I love the way they add flavour to a dish and something that is really boring can suddenly taste amazing.
Take a chicken dish that has been made in a lovely cheese sauce. You can bring it alive just by adding some mixed herbs and some tarragon. You can do the same with a simple spaghetti bolognese with a teaspoon each of basil and oregano.
I can’t remember a time when I didn’t have a cupboard full of herbs and spices and I have loved adapting to the local herbs and spices available in Portugal since moving to this amazing country.

Though I remember the first time we shopped for spices in Portugal (after moving here in 2008) and getting the names of them mixed up and I recall cinnamon going in our fish sauce. I have not been allowed to forget about that, even after nearly 8 years!
