There is mum, dad, teenage son and 2 under 4s in our household. We love cooking from scratch and we adore our food. But we find that a lot of cheap meals for 5 is boring, includes lots of processed foods such as cans of soup and very rarely gives you the recommended five a day.
That is why we started our Sunday section in 2018 for cheap meals for 5 for $5.
This Crockpot Chicken Pot Pie is the second of many.
When we recipe tested this for the first time, my eldest son was asking me what was for dinner. Like any 16-year-old teenage boy it’s all about the FOOD. It constantly goes in and they never ever seem to be full. He also plays a lot of football and in US sizes would be considered a skinny size zero.
So, when I told him that we would be sharing a chicken leg between the five of us, he didn’t look impressed. In fact, he looked miserable.
Fast forward to the evening when we were all tucking into our Crockpot chicken pot pie and mash and he would stop every few minutes to tell me how nice it is.
When we had finished eating I had that “I am stuffed” feeling because I had eaten way too much mash and Crockpot chicken pot pie. It didn’t feel like this was a stretched meal or that I was missing out. It felt a deep satisfaction that I had saved money and still created a delicious Sunday meal.
I used my small Crockpot to make my Crockpot Chicken Pot Pie. This is because it is compact and a perfect size for adding a nice layer of shortcrust pastry onto the top of them.

Crockpot Chicken Pot Pie & Mash
The beauty of this Crockpot Chicken Pot Pie is that it is not only delicious but incredibly cheap to make. I set myself the target of sharing a different $5 or less Sunday dinner meal, that would also include leftovers, and this was the first recipe that entered my head.
The idea behind it is that you can use 1 chicken leg to cook the Crockpot chicken pot pie with, it is then cooked in its juices giving it a strong chicken flavour rather than feeling like someone is missing out on a meal.
You then make the Crockpot chicken pot pie more frugal by bumping it up with a delicious creamy chicken sauce, plenty of vegetables and of course a huge side order of Instant Pot mash. As well as this the original juices that you used to slow cook your chicken leg, can then be recycled into gravy.




Crockpot Chicken Pot Pie
Ingredients
- Crockpot
- Measuring Jug
- Pastry Brush
- 1 Medium Chicken Leg
- Leftover Veggie Bake
- Instant Pot Mash
- Shortcrust Pastry
- 1 Chicken OXO Cube
- 1/3 Small Egg Beaten
- 1 Tbsp Rosemary
- 1 Tbsp Thyme
- Salt & Pepper
Instructions
- Place your crockpot on low. Add to it your chicken leg (it must NOT be frozen). In a measuring jug add to it 250ml of boiling water along with a crumbled chicken OXO cube. Sprinkle the chicken with salt and pepper. Pour over it the flavoured stock. Place the lid on your Crockpot and cook on low for 8 hours.
- After 8 hours, remove the chicken from the stock. On a chopping board and using your hands, shred all the meat from the bone. Remove the leftover stock from the Crockpot and put it to one side.
- Place your veggie bake into your Crockpot and add a little milk and a small amount of the chicken stock and keep it cooking on high for about 30 minutes. This will warm up the sauce and the vegetables and you can use this time to add any liquid you need to get it to the correct consistency.
- Place the lid on it and leave it for 20 minutes on high while you go and make your shortcrust pastry.
- Take the lid off your Crockpot. Add to it a little extra liquid so that it is slightly watery than you would like, because as it cooks it will thicken up. At the same time add the shredded chicken, your seasonings and give it a good stir.
- Roll out your pastry and place it over the chicken pie filling.
- Using your pastry brush add a little egg on top. Fork the edges to make it pretty and place some knife cuts into the middle of the pastry to allow it the chance to breathe while cooking.
- Cook on high for 3 hours.
- 30 minutes before it is due to be done make your mash. Serve with a little of the gravy made with the leftover chicken stock.

Crockpot Chicken Pot Pie – The Starter
Before we had our Crockpot Chicken Pot Pie we dived into our starter. For today we had soup again. I love soup for keeping me warm in winter and we have a soup machine which makes things so much easier.
What I made was new potato and apple soup. I quartered loads of new potatoes (about 500g worth) and peeled, cored and diced 6 small apples. I then placed it into the soup maker. I then added 250ml of vegetable stock made with a veggie OXO cube, salt, pepper and a pinch of parsley. It then cooked for 28 minutes on the soup setting while I prepped the main course. Then when it was done, I simply blended it and served it.
Crockpot Chicken Pot Pie – Dessert
For dessert we decided to go with using half of the pastry, then sweetening it up to make sweet pastry. Then we added an apple layer to the bottom with the rest of the apples we had leftover. We had bought loads and loads of apples as they were down in price to 69 cent a bag and this seemed ideal for using them all up. Crockpot Chicken Pot Pie – The Leftovers
YES. There really were some leftovers. When you’re doing pie it’s very easy to end up with too much filling and never enough crusty pastry. Or in some cases too much pastry when you have cut it to shape.
What we did with our Crockpot chicken pot pie leftovers was use it to make 5 little canapes. This is because there was some spare savoury pastry and we just placed it into round shapes, added it to the Airfryer with a little soft cheese on top and then served them. They tasted amazing.
As well as this the next day we had chicken pot pie wraps. There was enough pot pie to feed at least 7 people. So, what we did was take what was left, warm it up in a pan and then serve it inside some tortilla wraps. It was the business and so good.

I had promised you cheap meals for 5. A meal that you can put together on a Sunday to feed the 5 of you for $5 or less. It’s always nerve racking when you do this type of content on a food blog, as you’re always wondering if you are going to come in on budget or look like an idiot.

It’s safe to say that we managed to feed our family a delicious meal for $5. In fact this is the first time we have done it when we have reused leftovers and then made more leftovers from them.
We used 1 chicken leg to make the chicken pot pie with. It came from a chicken batch that we had got JUST from a supermarket coupons scheme. We hadn’t paid anything for it in the end.
On top of this the veggie bake used in this recipe as the veggie part of the chicken pot pie filling is based upon our Thanksgiving leftovers.
The gravy is 100% of the juices from cooking the chicken in the slow cooker the night before.
Then we had also made good use of a deal at the supermarket on apples and used this both towards dessert and towards the soup starter.
Prices may adjust from country to country, but these are the prices we paid in Portugal and works out at $3.11 for five people. Though this Crockpot Chicken Pot Pie is at the time of writing this post based on current exchange rates. We find that compared to the US our prices are identical. This is because we pay a lot more for our meat and dairy, yet a lot less for fruit and vegetables that it levels itself out.
